Our Cotswolds Dry Gin has a delectable blend of nine carefully-considered botanicals.
The expression of the traditional London dry style comes from the maceration into our pure wheat spirit of juniper, coriander and angelica root, which have been left for 12 hours to allow their flavour characteristics to fully infuse.
We then add our unique botanical mix of Cotswolds lavender and bay leaf, grapefruit, lime, black pepper and cardamom seed into our bespoke Holstein pot still for distillation before finishing with naturally refined Cotswolds water.
The result is a classic well-balanced juniper-led gin with crisp citrus and spice. This gin is delicious on its own and over ice. It’s robust enough to stand up to tonic and smooth enough to craft the ultimate gin martini.
Nose: fresh notes of grapefruit with earthy coriander backed-up by sweet juniper. Soft notes of black pepper with a hint of perfumed Cotswolds lavender.
Palate: clean, pine juniper spice with fresh grapefruit and coriander seed. A touch of dryness from the angelica root with eucalyptus notes from bay leaf. Subtle lime and lavender.
Finish: Clean and balanced. Juniper, citrus and some cooling notes from bay leaf and cardamom.

The first ever single malt whisky made in the Cotswolds.
Our first whisky bottling in 2017 will be blended from select ex-bourbon and red wine casks which were filled from our initial 2014 distilling runs, in which we used 100% organic Cotswolds barley sourced from a farm less than 20 miles away - Bradwell Grove Estate. The barley was floor-malted for us by Warminster Maltings before being milled, mashed, fermented and distilled at our rural distillery here in the Cotswolds. The whisky is currently aging in our warehouses and is already showing great promise, as evidenced by our 94/100 rating by Jim Murray in his 2016 Whisky Bible (see the full review).
This release is certain to become a collector's item and we are pre-selling only 2500 bottles, which we expect will sell out well before release. We expect it to be ready in October 2017, after the mandatory three-year ageing period.

With this wonderful new gin we pay homage to our local bard Mr. Wm Shakespeare on the 400th anniversary of his death. Shakespeare was known to fancy his ale and wine but in his days gin was made mainly in Holland and called Genever. It was made mainly with malt spirit which was redistilled and flavoured with botanicals, primarily juniper (Genever in Dutch, hence the name). Since we make beautiful malt spirit for our whisky we thought it would be great fun to try our hand at an old-fashioned Genever recipe, in honour of our famous 17th century neighbour! We redistill our malt whisky spirit in our bespoke Holstein pot still, combining it with juniper, coriander, cassia, nutmeg, orange peel and a few other secret botanicals. We then age it in specially toasted and recharred wine casks, in which it mellows and develops wonderful notes of wood and fruit. Best served neat or over ice, it’s also a tasty treat with ginger beer or your favourite mixer.
Nose: Freshly baked fruit loaf with spiced dark fruits and a hint of candied peel, dark chocolate chips, and vanilla.
Taste: This gin has a luxurious, thick texture that fills the mouth and a light, cosy warmth to it. There are oily citrus notes to start, then the base notes come through, adding a touch of chocolate and a hint of breadiness akin to marble rye bread. This is followed by dark, vine fruit notes and a gentle lift of cedar and oak.
Finish: Dry, with notes of juniper and an array of complex, spiced notes: a combination of baking spices and deeper, peppery, menthol, mace-like notes, which linger for several minutes after sipping.
Overall, a delicious and sippable spirit with the perfect equilibrium between the flavours of the base spirit, the botanicals, and the wood - just the way an aged gin should be.
Our Cotswolds Cream Liqueur is a tasty treat made by combining our new-make single malt spirit with the nature’s freshest cream. The cream is naturally preserved by the alcohol and the combination produces a wonderfully rich and luscious liqueur. Best consumed over ice, chilled or in coffee, Cotswolds cream is best stored in the refrigerator once opened. For optimum taste it should be consumed within 6 months after opening.
The spirit in our Cotswolds Cream is produced here in our distillery using our bespoke copper pot stills. We always dreamed of combining our single malt spirit with cream, but didn't have the necessary equipment here at the distillery to do this to scale. So we searched far and wide until we found our wonderful partners in Tipperary (Ireland), home to some of the world's best-known cream liqueurs. These experts combine our Cotswolds single malt spirit with the freshest Irish cream - helping us to offer a sensational product, with our single malt at its heart.
The idea came to us as we began to receive our first Sherry-seasoned barrels in which our whisky will be matured. Each barrel arrived with a few litres of wonderfully dark and rich sherry – Olorosso and Pedro Ximenez – to keep the barrels moist. Sherry being a fortified wine, we thought "why not fortify it a bit further with our own whisky spirit"? As founder Dan said, "if sherried whisky tastes great, then so should whiskied sherry!" And so our Spirited Sherry was born.
Our delicious Cotswolds Absinthe, made in very small batches, is modelled on a 19th century style and brings to mind the green meadows and sun-dappled woods of the Cotswolds with its very herbaceous notes. We put Green Anise, Fennel, Grand Wormwood, Angelica Seed into our small artisanal pot still and create a perfumed spirit which is then coloured by macerating Petite Wormwood, Lemon Balm, Veronica and Hyssop in the spirit. It is bottled at a traditionally high strength to best preserve its natural colour, and is diluted before drinking
Quite herbaceous with a strong citrus note, along with the traditional anise and chlorophyll flavours. When water is added (recommended volume – 4:1) it develops a lovely louche (i.e. it goes cloudy, even a bit milky). Cooling and refreshing on a warm summer day, it’s the perfect aperitif!
The Cotswolds Distillery is soon to release the first Single Malt Whisky distilled in the Cotswolds AONB and is now offering a limited number of casks for sale to the public this year.
Whether you are a devoted whisky connoisseur, a club or just a circle of friends, our Cotswolds Cask offer will involve you with your whisky every step of the way; from choosing the cask to filling it yourself, then keeping a watchful eye on the maturation process.
It’s a unique opportunity to be part of something special and one not to be missed.
The price includes up to ten years’ ageing in our bonded warehouse, insurance and the spirit itself.
You may choose the time at which to bottle your whisky, at which stage you will be responsible for bottling and labelling costs, excise duty and VAT,
or you may choose to bottle 1/3 of the cask with no additional costs, in exchange for which we keep the remaining 2/3.
Or if you change your mind further down the line you can always sell your cask back to the distillery.
Additional years of storage are available at £25 per year.
For the Cotswold Cask offer we are offering 200-litre first fill ex-Bourbon casks from the USA.
These are the classic casks used to mature Single Malt whisky. The Bourbon casks are made of American oak and will impart a traditional finish with characteristic vanilla, honey and tropical fruit notes.
The amount of time you age your Cotswolds Single Malt beyond the mandatory three years is up to you, putting you in charge of the final flavour.
Our team of distillers will be on hand to offer any advice you require on the process.
We will contact you directly to arrange your filling date, or if you cannot attend yourself we will fill the cask on your behalf.
We will also provide you with a commemorative certificate with the number of your cask. The cask will be stored here in the Cotswolds, in our bonded warehouse next to the distillery.
Don’t be a stranger
Cask owners are invited on an annual pilgrimage to our distillery, where you will be treated to a tour and where we will arrange for a sample from your cask to be delivered so that you can see how it’s maturing.
Casks will be in storage in our own bonded warehouse on site and can be viewed during your visit, provided we’re given ample notice.
Similarly to your personalised filling date, if you are unable to visit us for sampling we will happily draw annual samples on request and hold them here until such a time as you can make the trip to the Cotswolds to appraise your cask’s progress.
Options and flexibility
Thinking a barrel is too much whisky for you? No worries, as we provide three different options to suit your needs:
- Full bottling of your cask for you, where you pay the Duty, VAT and bottling charges;
- Bottling of 1/3 of your cask at no additional charge to you, in which case we retain 2/3 of the barrel;
- Or if you change your mind, you have the option of selling the cask back to the Distillery under bond.
