Our barrel aged gin is made by redistilling our malt whisky in a copper still and combining it with juniper, coriander, nutmeg, orange peel and other botanicals. The result is an extraordinarily delicious spirit best served over ice or with ginger beer.

A traditional genever-style gin, with warming malt and spice notes, aged to perfection.

 

The finest ingredients

Based on historic methods, this is a complex combination of pure wheat spirit, distilled malt wines, and gin botanicals; juniper, coriander, angelica, orange peel, cassia, nutmeg and allspice.


Tasting notes

Nose: Freshly baked fruit loaf with spiced dark fruits and a hint of candied peel, dark chocolate chips, and vanilla.

Palate: Luxurious and warming. Citrus notes to start, then a touch of chocolate and a hint of marble rye bread. This is followed by dark, vine fruit notes and a gentle lift of cedar and oak.

Finish: Dry, with notes of juniper and an array of complex, spiced notes: a combination of baking spices and deeper, peppery, menthol, mace-like notes, which linger for several minutes after sipping.

Lovingly crafted

This unusual spirit, which pays homage to our local bard William Shakespeare, is our interpretation of the gins of his time which were largely made in Holland.  The traditional Dutch genever recipes of the time were based on ‘malt wine’ (low-strength barley spirit) distilled with botanicals.  We make our own malt wine, which is then redistilled with botanicals that evoke the exotic trade-route spices of the era.  The spice selection marries perfectly with our malt, which is then added to a base of pure wheat spirit prior to casking.  
The spirit is matured in our STR red wine casks for 3 to 6 months before being diluted down to bottling strength at 46%. Then we just have to wax dip each one by hand and stamp a pheasant in the hot wax…


Serving suggestions

Delicious sipped over ice, the 1616 also works perfectly with ginger ale or ginger beer.
