1616 BARREL AGED GIN

A traditional genever-style gin, with warming malt and spice notes, aged to perfection.

The finest ingredients

Based on historic methods, this is a complex combination of pure wheat spirit, distilled malt wines, and gin botanicals; juniper, coriander, angelica, orange peel, cassia, nutmeg and allspice.


Tasting notes

Nose:Freshly baked fruit loaf with spiced dark fruits and a hint of candied peel, dark chocolate chips, and vanilla.

Palate: Luxurious and warming. Citrus notes to start, then a touch of chocolate and a hint of marble rye bread. This is followed by dark, vine fruit notes and a gentle lift of cedar and oak.

Finish: Dry, with notes of juniper and an array of complex, spiced notes: a combination of baking spices and deeper, peppery, menthol, mace-like notes, which linger for several minutes after sipping.

Lovingly crafted

This unusual spirit, which pays homage to our local bard William Shakespeare, is our interpretation of the gins of his time which were largely made in Holland. The traditional Dutch genever recipes of the time were based on ‘malt wine’ (low-strength barley spirit) distilled with botanicals. We make our own malt wine, which is then redistilled with botanicals that evoke the exotic trade-route spices of the era. The spice selection marries perfectly with our malt, which is then added to a base of pure wheat spirit prior to casking.

The spirit is matured in our STR red wine casks for 3 to 6 months before being diluted down to bottling strength at 46%. Then we just have to wax dip each one by hand and stamp a pheasant in the hot wax…

Serving suggestions

Delicious sipped over ice, the 1616 also works perfectly with ginger ale or ginger beer. Or how about trying it in a hot cocktail? ?


COTSWOLDS ABSINTHE

Forget what you’ve heard, this is one elegant spirit.

The finest ingredients

Our delicious Cotswolds Absinthe, made in very small batches, is modelled on a 19th century style and brings to mind the green meadows and sun-dappled woods of the Cotswolds with its herbaceous notes.

The key to making absinthe is the addition of one set of botanicals for flavour and a second botanical infusion to give it it’s characteristic yellow-green colour.

Tasting notes

Quite herbaceous with a strong citrus note, along with the traditional anise and chlorophyll flavours. When water is added (recommended volume – 4:1) it develops a lovely cloudy louche.

Lovingly crafted

We distil Green Anise, Fennel, Grand Wormwood, and Angelica Seed with pure wheat spirit in our small copper pot still to create a highly aromatic and perfumed distillate.

This is then coloured by macerating Petite Wormwood, Lemon Balm, Veronica and Hyssop in the spirit, with a gentle heat. It is bottled at a high strength to preserve its natural colours.

Serving suggestions

Cooling and refreshing on a warm summer day, it’s the perfect aperitif when mixed with water and lots of ice.


COTSWOLDS CREAM LIQUEUR

Our guiltiest pleasure, this beats anything similar you’ve tried before.

The finest ingredients

Our own new make spirit (unaged whisky) distilled in our pot stills, blended with fresh cream.


Tasting notes

Suprisingly light and silky, the cream carries delicious vanilla and butterscotch notes, and a lovely hint of maltiness.

We always dreamed of combining our single malt spirit with cream, but didn't have the necessary equipment here at the distillery to do this to scale. So we searched far and wide until we found our wonderful partners in Tipperary (Ireland), home to some of the world's best cream liqueurs. These experts combine our Cotswolds single malt spirit with fresh Irish cream - helping us to offer a sensational product, with our single malt at its heart.

Serving suggestions

Chilled in the freezer just before serving, this is perfect as it comes. But we’ve been known to pour it over ice cream too…


COTSWOLDS SUMMER CUP

Our Cotswolds take on a classic; an aromatic, spiced and intriguingly moreish summer sip.

The finest ingredients

Our own Cotswolds Dry Gin forms the base of this summer cup, to which we add a homemade vermouth, our Spirited Sherry and a splash of triple sec to finish it off.


Tasting notes

Rich, spicy and complex, with a fruity lift. This is a far more grown-up alternative to the familiar summer cup out there.

Lovingly crafted

We wanted to make as many elements of this complex drink ourselves – so we even went as far as creating our own vermouth (wine, a botanical tea with herbs and spices, and bitter caramel). After weeks of tinkering with the perfect proportions we ended up with this delicious number in which the Cotswolds Dry Gin can shine.

Serving suggestions

For the perfect serve, fill a large balloon glass with 1 part Cotswolds Summer Cup over plenty of ice, top with 2 parts ginger ale or lemonade and garnish with fresh mint, cucumber and a slice of pink grapefruit.


SPIRITED SHERRY

A genius marriage of sherry and whisky.

The finest ingredients

This is a careful blend of 3 Spanish sherries (Oloroso, Pedro Ximenez and an ‘Orange Wine’ where the sherry has been infused with Seville orange peel as it rests) with our own single malt spirit.


Tasting notes

Deep, complex and moreish, this manages to deliver the raisin richness of the sherries, which are tempered by the complex, more malty notes of the spirit. With a lovely marmalade hint on the finish.

Lovingly crafted

The idea came to us as we began to receive our first Sherry-seasoned barrels in which our whisky will be matured. Each barrel arrived with a few litres of wonderfully dark and rich sherry – Olorosso and Pedro Ximenez – to keep the barrels moist. Sherry being a fortified wine, we thought "why not fortify it a bit further with our own whisky spirit"? As founder Dan said, "if sherried whisky tastes great, then so should whiskied sherry!" And so our Spirited Sherry was born.

It’s delicious at the end of a good meal, or sipped from a flask on a brisk walk. Or just on its own on a winter’s night in front of the fire.


ESPRESSO MARTINI

Completely colourless, our distilled Espresso Martini is an uncompromising bottled cocktail with a difference.

The finest ingredients

We use only the finest locally-roasted Malabar and Enorga beans from the Monsoon Estates Coffee Company, distilled along with aromatic ingredients such as orange peel and coriander seed.


Tasting notes

An enticing bouquet of dark chocolate, orange and freshly roasted coffee on the nose with a wonderfully rich and luxurious mouthfeel. A warming and well-balanced finish with chocolate orange, velvety coffee and a hint of spice.

Lovingly crafted

We start by cold-brewing a rich coffee roasted locally by Monsoon Estates Coffee Company. This is then carefully distilled in our beautiful copper Holstein still with pure wheat spirit, fresh orange peel and a blend of spices. We then add a touch of sweetness to the distilled spirit, and blend it with filtered water to bring it down to bottling strength.

Serving suggestions

Serve ice cold into a chilled sherry glass for a perfect cocktail every time.


HEDGEROW GIN

Rich, ripe berries and full-bodied gin: the perfect combination.

The finest ingredients

Sloes, damsons, bullace and blackberries, all foraged locally by our chief fruit forager, Vince. Steeped in award-winning Cotswolds Dry Gin and then sweetened with a touch of sugar.


Tasting notes

Fragrant and heady, the rich red fruit notes and a hint of dry spice come through on the nose. The piney gin perfectly supports the full-bodied berry flavours, stopping short of the heavy sweetness you often get with sloe gins.

Lovingly crafted

We soaked the foraged fruit in our Cotswolds Dry Gin for nine long months, allowing the gin to extract not only the rich fruitiness of the fruit but also the dry, aromatic almond notes from the stones at their centre. We then squeezed all the juice and gin out of the fruit, and sweetened it with a little sugar. Most sloe gins are diluted and sweetened to liqueur strength (around 20% abv) but with our Hedgerow Gin we’ve left it at full spirit strength – this is an utterly grown up number.

Serving suggestions

Delicious simply poured over ice, this also works particularly well splashed into a glass of sparkling wine. Or try it in one of Ollie’s fantastic cocktails.
