Made with 100% locally grown, traditionally floor malted barley from the Cotswolds, this very limited single cask release was filled into a first-fill Ruby Port barrique on the 8th May 2015 with our rich and fruity new make single malt spirit. Aged full-term at our distillery in the Cotswolds, this release was bottled on-site at 58.4% ABV on the 19th November 2021. A wonderfully rich and spicy single malt with notes of peach stones and sweet orange fondant, followed by a long, sweet finish. Each bottle comes beautifully presented in a luxury display carton.

The finest ingredients

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

Water: Village water supply - filtered, softened and demineralised before use.

Wood: A first-fill Ruby Port barrique.


Tasting notes

Nose: Lots of vanilla, peach stones and sweet orange fondant.

Palate: Rich and spicy with a hint of pink pepper and sweet fudge.

Finish: A long, sweet finish with light wood tannin and a hint of grape skin.

Lovingly crafted

This whisky release begins with our new make spirit, made with 100% locally grown, traditionally floor-malted barley, which is already incredibly smooth, rich and fruity thanks to the pair of yeasts we use, the long 90-hour fermentation and the tight heart cut on the spirit still. Once diluted to 63.5% ABV, we filled a first-fill Ruby Port barrique with our new make spirit on the 8th May 2015 for full term maturation.

Once fully matured, this whisky was bottled on the 19th November 2021 by our team at cask strength, non-chill filtered and without added colouring.
