Our limited edition Pineau des Charentes Cask Single Malt Whisky is the second expression in our Hearts & Crafts collection. This yearly limited edition series celebrates the Arts & Crafts movement which flourished here in the Cotswolds and stood for the importance of traditional craftsmanship - the same values upon which our beautiful rural distillery was built.
We've selected a small parcel of premium French oak ex-red wine casks seasoned with white Pineau des Charentes - a wonderful blend of fresh grape juice and Cognac. The sweet notes of this golden aperitif wine are well balanced by the French oak tannins, resulting in wonderfully rich notes of tonka bean, marzipan and caramelised peaches. All bottles come with a limited edition William Morris design presentation tube.
Non-chill filtered. Natural colouring.
A lovely indulgence, or 'gourmandise' as the French would say...
Carefully sourced ingredients
Malt: Odyssey, grown on Cotswolds farms and floor-malted at Warminster Maltings.
Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.
Water: Village water supply - filtered, softened and demineralised before use.
Wood: French oak ex-red wine casks seasoned with white Pineau des Charentes.
Nose: Wonderfully rich tonka bean, marzipan and caramelised peaches.
Palate: Raisins and brazil nuts with dried orange peel.
Finish: A warm and long finish with hints of white pepper and almonds.
We started making this very special release by using 100% locally grown, floor-malted barley from the Cotswolds which is mashed and then fermented for more than 90 hours using two different yeast strains. High and narrow cut points during distillation in our Forsyths copper pot stills results in a smooth and fantastically fruity new make spirit.
For this limited edition release, our Cotswolds new make spirit has been aged for its full term in a small parcel of premium French oak casks seasoned with white Pineau des Charentes. Once fully matured, we bottled this expression on-site with only minimal proofing down (55.2% ABV), non-chill filtered and without any added colouring.
Best enjoyed on it’s own, but we don’t believe in rules when it comes to drinking whisky – sip this neat, over ice, in a cocktail – however you like!
