Our Cotswolds Whisky Amaro Liqueur No.2 is a complex, herbaceous liqueur with notes of spice and a slightly bitter finish, made by blending select botanicals with our award-winning Cotswolds Peated Cask Single Malt Whisky.

This whisky liqueur was conceived in the tradition of an Italian ‘amaro’ - a bittersweet, herbal liqueur - and is best enjoyed at the end of a meal as a digestif, well-chilled or on the rocks. Salute!

Carefully sourced ingredients

Malt: Odyssey, grown on Cotswolds farms and floor-malted at Warminster Maltings.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

Water: Village water supply - filtered, softened and demineralised before use.

Wood: Ex-peated quarter casks from Scotland.

Select botanicals: Bitter base including chamomile, citrus and herb.


Tasting notes

Nose: Treacle tart, lapsang souchong tea, full of rich, smokey and sweet aromas.

Palate: Light smoke with sweet burnt caramel and bittersweet herbal notes.

Finish: Smoke fades with a touch of caramelised peaches and a long bittersweet finish.

Lovingly crafted

Our Cotswolds Whisky Amaro Liqueur No.2 begins with our Peated Cask Single Malt Whisky base, to which we add a blend of select botanicals including chamomile, citrus and herbs. Bottled at 40% ABV on-site at the distillery, non-chill filtered.
