We began making this unique release the same way as our flagship single malt. High and narrow spirit cuts, following on from a long fermentation using two yeast varieties, are responsible for the high ester count in our new-make spirit, resulting in a creamy and fruity flavour.
We then matured the new-make spirit at 63.5% ABV in the Lord Mayor’s ex-Bourbon casks and shaved, toasted and recharred American Oak red wine barriques. During this time we also filled a 500L ex-Pedro Ximenez Sherry butt with our new-make spirit, which was left to age for 3.5 years. These three casks were blended in roughly equal measures and then re-casked for an additional month. The addition of the sherry cask has added a different layer of spice and fruit to our flagship single malt. This truly special bottling has been diluted to 46%, non-chill filtered and without any additional colouring.
We don’t believe in rules when it comes to enjoying whisky – sip this neat, over ice, in a cocktail – however you like!
