The first whisky ever made in the Cotswolds, our award-winning Cotswolds Signature Single Malt Whisky is crafted using the finest locally grown, traditionally floor-malted Cotswold barley. Belonging to our Classics Collection, our Signature Single Malt favours the rich and bold, fruity notes which result from maturation in our highly active STR (Shaved, Toasted and Re-charred) ex-red wine barriques. Blended with whisky matured in premium first-fill ex-Bourbon barrels, this single malt has notes of honey, red fruits and a hint of treacle.

Maturation in highly active STR (Shaved, Toasted and Re-charred) ex-red wine barriques gives it rich, bold, fruity notes, balanced with whisky from premium first-fill ex-Bourbon barrels - resulting in flavours of honey, red fruit and a hint of treacle.

This is where it all began. Made from traditionally floor-malted Cotswolds barley and matured in red wine and bourbon casks, our Signature Single Malt is rich, fruity and easy to love. Non-chill filtered, natural colour, 46% ABV.

Grown 15 minutes away at Akeman Street Farm and traditionally floor-malted.

English Old Fashioned

Simplicity in a glass: sweet malted barley, a hint of honey and a bitter marmalade finish.

You'll need

  • 60ml Cotswolds Signature Single Malt
  • Barspoon of honey
  • Barspoon orange curacao
  • 2 dashes orange bitters
  • 2 dashes aromatic bitters
  • orange peel to garnish

Method
Stir the whisky, honey, orange curacao and the bitters together in a cocktail jar or glass until combined. Add ice and stir around 30 times for plenty of dilution and a little more ice. Express the orange peel around the glass and drop it in to garnish.

Our barley is grown at Akeman Street Farm by Michael Greene, a fifth-generation farmer, in Cotswolds limestone soil. We know the farm, the family and the field where every bottle begins.

While still devoted to Scottish single malt, this is a very pleasant alternative: peaty but not too much (whete did that come from in the Cotswolds?), smoky, but not too much. Very happy to have this alingside the Glenlivet.
