A true expression of Cotswolds character, this single cask whisky was filled in 2017 and matured full term in a 1st fill ex-Bourbon barrel, right here in the heart of the Cotswolds. Released to mark our 12th birthday, it felt right to choose a cask that says everything about who we are and how we make it.

Generous notes of vanilla lead the way, layered with a distinct almond and walnut character and soft stone fruit from the spirit itself. Bottled at 50% ABV, it's remarkably easy-drinking, finishing soft and smooth.

Tasting Notes

Nose: Vanilla, almond and walnut.

Taste: Rich and rounded. Vanilla and toasted nut carry through, with that same gentle stone fruit sweetness. 

Finish: Soft, smooth and easy-drinking.

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds. Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours. Water: Village water supply - filtered, softened and demineralised before use. Wood: STR (Shaved, Toasted and Re-charred) American oak ex-red wine casks and premium first-fill ex-Bourbon barrels.
