Introducing our newest creation – Spanish Oak whisky, a truly special expression. Crafted with meticulous care, this whisky is a captivating fusion of Spanish Oak Oloroso sherry casks and our signature first-fill ex-red wine and bourbon barrels.

Immerse yourself in the symphony of flavours, from the initial vanilla notes and sweet cooking spices on the nose to the taste of dried apricots, custard and star anise.

The finish brings a subtle wood tannin and lingering vanilla, leaving an enchanting and unforgettable experience on your taste buds.

CAREFULLY SOURCED INGREDIENTS

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

Water: Village water supply - filtered, softened and demineralised before use.

Wood: Premium first-fill ex-Bourbon barrels from Kentucky, made from American white oak (Quercus alba).

Best enjoyed on it’s own, but we don’t believe in rules when it comes to drinking whisky – sip this neat, over ice, in a cocktail – however you like!

We feel extremely lucky to live in one of England's most charming and beloved regions, full of character, romance and history. We try, where possible, to emphasise the rich agricultural bounty of the Cotswolds. The principle things that grow in the Cotswolds are fruits and grains, and these are the building blocks of our flavour profiles.
